How to Make Homemade Ice Cream with a BBQ Smoker

How to make smoked-milk ice cream without an ice cream maker.

To be up-front, Chef Ben Tish's recipe for smoked-milk ice cream requires two days of work and a couple pieces of machinery. But for a homemade batch of ice cream, it is both unique and a superb summertime complement to fresh berries.

So, the machinery. You'll need a cold-smoker of some sort to prep the milk. If you're good with your hands, here's a step-by-step guide to building your own smoker. Another option is to invest in one. An ice-cream machine would save you time as well, but there's a hack for that too, described below. However you go about it, you'll get a subtly smokey, sweet dessert, just in time for warm weather.
 
Ingredients
  • 2/3 c. caster (superfine) sugar
  • 1 lemon, juiced and zest finely grated
  • 14 oz. mixed seasonal berries
  • wood dust
Smoked-Milk Ice Cream
  • 2 c. full-cream (whole) milk
  • 1 tbsp. caster (superfine) sugar
  • 5 tbsp. condensed milk

Directions
  1. First make the smoked-milk ice cream. Set up the cold-smoking device in the barbecue with the wood dust and get it going. Pour the milk into a wide, heat-proof bowl or tray and place in the barbecue, then close the lid and vent and leave to cold-smoke for 1 hour. Cover the bowl of smoked milk, then chill in the fridge overnight to rest and balance.
  2. Next day, place the smoked milk and the sugar in a saucepan over low heat on the stovetop and carefully reduce by half–keep a close eye on it, as it can easily boil over. Pour into a bowl, then whisk in the condensed milk and leave to cool before transferring to an ice-cream machine* and churning according to the manufacturer’s instructions.
  3. When the ice cream is ready, place the sugar, lemon zest, and juice, along with 1/2 cup water, in a non-reactive saucepan and bring to the boil. Remove from the heat and add all the berries, then cover the pan and leave for 15 minutes to macerate and cool slightly.
  4. Divide the berries between the bowls and serve with a scoop of smoked-milk ice cream on top.
